What cut of meat is used for brisket?

The Brisket is one of nine primal cuts of beef – it is cut from the lower front section of the steer, beneath the chuck (shoulder). There are two main parts of a brisket:

  1. Flat (or First Cut) – Leaner, with a uniform shape, making it ideal for slicing. This is what’s often used in deli-style brisket or braised dishes.
  2. Point (or Second Cut/Deckle) – Thicker, with more fat and marbling, making it extra juicy and ideal for BBQ (like burnt ends).

Because it’s a well-exercised muscle, brisket is tough and requires slow cooking methods like smoking, braising, or slow roasting to become tender.
