Corn & Black Bean Salad
Cooking Instructions
Rinse and drain black beans in a colander. Finely chop red onion, tomatoes, cilantro, jalapeno, & red pepper no bigger than a kernel of corn, and mix together in bowl with black beans & corn. Squeeze lime juice from all 6 limes and then add olive oil, cumin, garlic and salt & pepper to taste. (You can add a pinch of sugar if desired) Stir until mixed together, then pour over corn and bean mixture and toss well. Cover and put in refrigerator for at least one hour. Great served with tortilla chips. Time To Prepare: 30
